SPANISH RICE 
4 to 6 slices chopped bacon
1/2 c. chopped green pepper
1/2 c. chopped onion
1 c. raw rice
28 oz. whole tomatoes with liquid
1/2 c. boiling water
4 chicken bouillon cubes
1/2 tsp. paprika
1/2 tsp. chili powder
3 dashes cayenne
1/2 tsp. pepper

Saute bacon pieces until crisp. Remove from pan, set aside. Add onions and green pepper to bacon grease until softened. Add rice and saute 2 minutes. Add remaining ingredients, crushing tomato and chicken cubes. Heat to boiling, stirring. Cover, reduce heat and simmer 20 to 30 minutes or until rice is done. Stir in bacon and serve. Can be a main or side dish.
