CORN-ZUCCHINI CASSEROLE 
2 med. zucchini
2 pkg. frozen cut corn
2 med. tomatoes
2 tbsp. chopped green onions
2 tbsp. chopped green pepper
2 tsp. salt
2 tsp. sugar
3/4 c. grated sharp cheddar cheese
Dash of black pepper, oregano and basil

Butter casserole. Slice zucchini in bottom. Mix tomatoes, onions, green pepper and seasonings. Put 1/2 mixture over zucchini. Add corn. Cover with remaining tomato mixture. Bake covered at 350 degrees for 35 minutes. Remove cover; stir. Cover top with cheese. Return to oven, uncovered, for 15 minutes. DO not over cook!
