COUNTRY SHORTBREAD 
1/2 lb. butter, softened (no substitutes)
2 c. flour
3/4 c. confectioners' sugar

Preheat oven to 325 degrees. Cream butter and sugar together until fluffy. Add flour. Dough will be very thick. If necessary use hands to complete mixing. Turn dough into a well oiled shortbread mold, pressing firmly to make sure that dough fits into every surface of mold. If you do not use a shortbread mold, then roll dough out to a thickness of 1/2". Cut into 2 1/2" squares and place on a lightly greased cookie sheet. Bake 40 minutes for mold or until shortbread is lightly browned. Bake 25 to 30 minutes for squares. Cool on a wire rack. This shortbread makes a nice gift item.
