CHICKEN MARINADES 
THREE CITRUS MARINADE:

1/2 c. fresh lime juice
1/2 c. fresh lemon juice
1/2 c. fresh orange juice
1/2 c. olive oil
4 cloves garlic, minced
2 tsp. ground black pepper
3 crushed bay leaves
3 tbsp. fresh cilantro, chopped
Salt & pepper to taste

Combine all ingredients and let stand at room temperature 30 minutes. Pour over chicken and marinate 2 to 3 hours.

SPICY MARINADE:

1 1/2 c. dry white wine (or red wine for red meat)
1/2 c. olive oil
2 tbsp. chopped fresh basil, oregano, thyme
1 clove minced garlic
1 serrano chili, split in half, discard seeds
Salt & pepper to taste

Combine, let sit 30 minutes. Marinate up to 6 hours.
