GIGI'S ENCHILADAS | |
1 1/4 lb. cut up baked chicken 16 oz. Picante sauce 1/4 c. oil 1 c. bell pepper 1 sm. onion 8 oz. can sliced mushrooms 1 can refried beans 8 inch flour tortillas 1-2 c. grated Cheddar cheese Garlic powder to taste Pepper to taste Oregano to taste Saute peppers, mushrooms, and onion in oil, seasoning with garlic powder and pepper. Drain off oil when done, and mix in Picante sauce. Mix together well, add cut up chicken, season with oregano, then add refried beans. On tortilla place grated cheese, then meat mixture. Fold and place in long baking dish, topping with more cheese. Bake for 30 minutes at 350 degrees. Serve with tomato, lettuce, sour cream and guacamole. Winter Park Lodge 64, F.O.P. |
