HOPPIN JOHN 
2 cans black-eyed peas (heated)
1 can chopped ham or bacon
1 c. chopped onion
1 tsp. hot pepper sauce
2 tbsp. oil
1/2 tsp. salt
3 c. rice

Saute ham or bacon, onions, and hot pepper sauce in oil over medium heat for 3 to 5 minutes, stir frequently until onions are soft but not brown.

Combine black-eyed peas, ham mixture, and rice. Heat mixture. Garnish with thin slices of ham. Serves 6 to 8.
