SPINACH MUSHROOM QUICHE | |
1 (10") pie crust, baked 1 (10 oz.) pkg. frozen chopped spinach, thawed 1 (4 oz.) can mushrooms 4 eggs 1/2 c. grated Swiss cheese 1/2 c. half & half 1/2 c. milk 3/4 tsp. salt 1/8 tsp. nutmeg 1/8 tsp. pepper Sprinkle bottom of pie crust with half of grated cheese. Place spinach in a colander and press out as much water as possible. Then spread spinach on the cheese evenly. Place mushrooms on top. Sprinkle with remaining cheese. In a medium bowl, beat eggs with cream and remaining ingredients. Pour cream mixture over. Bake at 375 degrees for 40 minutes or until bubbly and golden. Serves 4 to 6. |
