MOM'S ENGLISH TOFFEE COOKIES 
1 c. butter
1 c. sugar
1 egg, separated
2 c. flour
1 tsp. cinnamon
1 c. chopped pecans

Preheat oven to 275°F. Cream butter and sugar until smooth. Add egg yolk and mix. Add flour and cinnamon and mix thoroughly. Spread in an even layer over entire surface of a greased cookie sheet with sides. Beat egg white slightly and spread over top. Sprinkle pecans evenly over top and lightly pat into dough.

Bake at 275°F for 1 hour until lightly browned. Cut into squares while still warm.
