RENE'S BANANA BREAD 
1 c. sugar
3/4 c. shortening
1 1/2 c. mashed ripe bananas
2 eggs
2 c. flour
1 1/2 tsp. baking soda
Pinch of salt
Dash of nutmeg
1 tsp. lemon juice
1/8 tsp. rum flavoring, opt.

Beat together sugar, shortening and eggs. Add bananas and continue to beat. Add flour, soda and salt to thicken. Beat about 2 minutes, adding remaining 3 ingredients. Pour batter into a well greased and floured loaf pan. Bake at 350 degrees for 1 hour or until tested done in center. Remove from pan and cool.
