RICE PUDDING 
1 qt. milk
1/2 c. reg. rice
1/2 c. raisins
1/4 tsp. salt
2 eggs
1/2 c. sugar
1 tsp. vanilla

Pour milk into top of double boiler, bring to boil. Add salt, rice and raisins. Cook until rice is tender. Do not over cook.

In bowl beat eggs; add sugar and vanilla. When rice is cooked, slowly add rice mixture to eggs and sugar. Pour mixture back into double boiler. Stir slowly until mixture thickens, 3 to 5 minutes.

Remove from heat, pour into serving dish. Sprinkle with cinnamon or nutmeg if desired.
