RICE PUDDING 
3/4 c. short grain rice
8 c. milk
1 c. sugar
1/2 c. finely chopped pistachio
3 tsp. orange blossom water

Wash the rice in water and soak in hot water for 1 hour. Boil the milk. Add the rice to the milk. Every few minutes, stir the milk and rice, until the rice is done and you feel it is blended well together.

Add the sugar and the orange blossom and keep stirring for half an hour. Remove from the heat. Serve cold in small platters, garnished with chopped pistachio.
