STUFFED LOW - FAT POTATOES 
3 or 4 baking potatoes, baked
1 pkg. frozen chopped spinach, thawed & drained
1/2 to 3/4 c. nonfat cottage cheese
2 to 3 tbsp. unflavored yogurt or nonfat sour cream
Salt & pepper to taste
Grated Cheddar cheese (low fat, of course)

Bake potatoes, cut in half lengthwise, scoop out insides. Mix potato "meat" and all other ingredients except Cheddar cheese. Stuff mixture back into potato skins. Reheat potatoes (microwave is fine). Top with a little grated Cheddar cheese. Heat to melt cheese.

Since microwave ovens vary in power, you may need to adjust your cooking time.
