NEW YORK CHEESECAKE 
1 c. graham cracker crumbs
1/2 stick butter
3/4 tsp. cinnamon
1/2 tsp. flour
Lemon peel, optional

CAKE:

1 1/2 c. sugar
5 eggs
1 1/2 pts. sour cream
1 1/2 tsp. vanilla
3 (8 oz.) cream cheese
Some lemon/orange peel, optional

Preheat oven 375. Leave eggs and cream cheese 1 1/2 hours (overnight o.k.).

Crust: Melt butter. Mix dry ingredients and add butter. Pat into bottom of spring pan.

Cake: Hand blend sugar and cream cheese. Add one egg at a time. Be sure eggs are well blended. Add rest of ingredients and blend. Pour into spring pan.
