ZUCCHINI NUT BREAD 
4 eggs
1/3 c. milk
1 1/2 c. sugar
3 c. all purpose flour
1 c. vegetable oil
1 tsp. salt
1 tsp. vanilla
1 tsp. lemon juice
1 1/2 tbsp. cinnamon
2 tsp. baking powder
1 tsp. baking soda
1/3 c. raisins
1/3 c. chopped walnuts
1 1/2 c. shredded zucchini

Preheat oven to 350 degrees. Blend 1 egg, milk and 1 tsp. sugar as an egg wash.

Combine remaining eggs and sugar with flour, oil, salt, vanilla, lemon juice, cinnamon, baking powder, soda, raisins, walnuts and zucchini in large food processor and blend, pulsing off and on, until mixed.

Fill 2 (9 inch) lightly greased, floured layer cake pans and bake at 350 degrees for 30 minutes. Brush with egg wash. Bake 2 more minutes. Serve warm cut in wedges. Also may be baked in disposable aluminum pie pans.
