ZUCCHINI SPECIAL 
4 med. zucchini or squash
1 tbsp. butter
1/4 c. Italian salad dressing
1/2 c. salsa
2 eggs
4 slices American cheese
4 tsp. grated Parmesan cheese

In a skillet, cook squash covered with lid until tender. Turn frequently. Do not let it get too soft and mushy. Stir in 2 raw eggs. The eggs will have a scrambled look to them. Turn burner down to low. Mix in the dressing and salsa. Sprinkle the Parmesan cheese on top. Place American cheese over all. Remove from heat. Cheese should be nicely melted.
