PASTRY PUFFS 
1 stick butter
1 c. flour
1 c. water

1. Combine butter and water in pot. Simmer. 2. Add flour and blend rapidly and completely using wire whisk. 3. Remove from heat. Cool slightly. 4. Add eggs one at a time until achieve smooth and firm consistency; 5. Drop by teaspoonsful onto baking sheet. Bake at 450 degrees for 15 minutes, then at 375 degrees for 10 minutes. Cool completely. 6. Cut in half, leaving one side attached. Fill with chicken salad, seafood salad, etc.

Dessert variation: Make larger puffs, about 3 times the size of appetizer puffs, and fill with vanilla custard or pudding, FRESH whipped cream and berry preserves.
