GERMAN APPLE PANCAKE 
2 lg. apples, peeled and sliced
1 tsp. lemon juice
2 tbsp. brown sugar
1/2 tsp. cinnamon
3 eggs
1/2 c. plus 2 tbsp. flour
1/2 c. plus 2 tbsp. milk
1/2 c. sugar
5 tbsp. butter
Powdered sugar

Preheat oven to 425 degrees. Toss apple slices with lemon juice, brown sugar and cinnamon; set aside. Combine eggs, flour, white sugar, and milk; beat slightly. Batter should be slightly lumpy.

Heat butter in a 12-inch cast iron skillet on top of stove. When hot and foamy, remove from heat. Quickly add batter. Top with apple mixture.

Place in oven and bake 20-25 minutes. Will be puffed and golden brown. Sift powdered sugar lightly over top. Cut into wedges. Makes 2 or 3 servings.
