PUMPKIN LOG 
3 eggs
2/3 c. pumpkin
1 c. granulated sugar
1 tsp. baking soda
1/2 tsp. cinnamon
3/4 c. flour
3/4 c. walnuts

Combine, put on greased, waxed cookie sheet. Spread 3/4 cup walnuts on top, bake at 375 degrees for 15 minutes. Take from oven and immediately remove wax paper. Sprinkle sugar on roll. Flip over onto linen towel and roll up with towel. (Roll so that walnuts are inside of roll.) Put in refrigerator for about 15 minutes.

Batter:
2 tbsp. butter
8 oz. Philadelphia cream cheese
3/4 tsp. vanilla
1 c. powdered sugar

Mix until smooth. Unroll cake and spread butter. Roll again without towel. Wrap in foil and refrigerate. Libby's can pumpkin seems to have better taste. 1 can (16 ounces) makes 3 loaves.
