PUMPKIN LOG 
3 eggs
2/3 c. pumpkin
1 c. sugar
1 tsp. baking soda
1/2 tsp. cinnamon
3/4 c. flour

Mix together all ingredients. Line a cookie sheet with wax paper. Pour mixture on and spread evenly. Bake at 350 degrees for 10-15 minutes. Remove from oven; cover with a clean towel and flip over. Lift cookie sheet off and peel off the wax paper. Let cool. Now mix 2 tablespoons soft butter, 8 ounces softened cream cheese, 3/4 teaspoon vanilla and 1 cup confectioner's sugar. When creamy spread on cooled pumpkin cake. Roll up like a jelly roll. Refrigerate and cut when needed.
