ROMAINE SALAD WITH WARM BRIE
DRESSING
 
8 oz. Brie cheese, at room temp.
2 qts. romaine or bibb lettuce, torn into pieces
1 med. red pepper, cut into strips
1 c. sliced mushrooms
1/3 c. Wish-Bone Herbal Italian, Italian or Lite Italian Dressing

DRESSING:

2 tbsp. finely chopped onion
3 tbsp. milk
1 tbsp. dry white wine

Remove rind from cheese, then cut into chunks; set aside.

In large salad bowl, arrange lettuce, red pepper and mushrooms; cover and chill.

Meanwhile, in large skillet, heat herbal Italian dressing over medium high heat and cook onion until tender, about 2 minutes. Reduce heat, then add cheese and cook, stirring constantly, until cheese is melted. Gradually astir in milk and wine until blended. Add additional milk, if necessary, for desired consistency. Cook over low heat, stirring constantly, 1 minute or until heated through. Serve warm over lettuce and top, if desired, with seasoned croutons. Makes about 8 servings.
