SHOEPEG MARINATED VEGETABLES 
1 can shoepeg corn, drained
1 lg. can mushrooms, drained
1 can baby peas, drained
2 sm. cans water chestnuts, drained and sliced
1 lg. jar pimentos, drained
1 green pepper, chopped
1 sm. onion, chopped
1/2 head cauliflower
1 c. celery, chopped

To marinate, mix together 1 cup oil, 1 cup water, 1 cup sugar, 1/2 cup vinegar, 1 tablespoon prepared mustard, salt and pepper. Marinate overnight. Pour marinade over mixture of above ingredients.
