GRANDMA'S FRESH APPLE CAKE 
3 eggs
1 1/2 c. vegetable oil
2 c. sugar
3 c. flour
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. salt
3 c. apples, peeled & chopped
1 c. walnuts
2 tsp. vanilla

Preheat oven to 350 degrees. Grease and flour 10" tube pan. Combine eggs, sugar and oil and beat 3 minutes at high speed. Sift dry ingredients together and slowly add to egg mixture. Batter will be very stiff. Fold in apples, nuts and vanilla. Pour into pan and bake 1 hour and 15 minutes. Cool, invert on rack.
