PECAN LOGS 
1/2 c. butter
1 lb. light brown sugar
2 eggs
3 tsp. vanilla
2 c. chopped nuts
1 1/2 c. pancake or Bisquick mix

In a large bowl, place butter and microwave on High for 1 minute until melted into butter. Mix brown sugar, eggs and vanilla. Stir well. Blend in nuts and pancake mix. Center will not be quite set but will be firm upon cooling. When cool enough to handle, cut into long thin bars and roll in powdered sugar. Microwave on High for 9 to 11 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
