COCONUT MACAROON CAKE 
4 eggs
2-1/4 c. sugar
1 c. buttermilk
2 c. self-rising flour
1 c. Wesson oil
1 pkg. coconut
1-1/2 tsp. coconut flavoring

Mix with spoon (not mixer). Cream eggs with sugar. Add milk and oil; mix well. Add flour, then coconut and flavoring.

Bake at 350°F for 40 minutes or until cake is done. Then pour syrup mixture (see below) over hot cake.

Syrup Icing:

1 1/2 c. water
2 1/4 c. sugar
1 1/2 tsp. coconut flavoring

Bring ingredients to a boil.
