REBECCA'S CHOCOLATE FILLED OATMEAL BARS | |
1 c. butter, softened 2 c. packed brown sugar 3 eggs 1 tsp. vanilla 3 c. quick cooking oats 2 1/4 c. unsifted flour 1 tsp. baking soda 1/2 tsp. salt Cream butter with sugar in large bowl. Beat until fluffy. Add eggs and vanilla. Beat well. Combine dry ingredients. Stir into creamed mixture. Spread 1/2 of above mixture in a greased 13x9 inch pan. CHOCOLATE FILLING: 12 oz. semi-sweet chocolate chips 1 1/3 c. (14 oz.) sweetened condensed milk 2 tbsp. butter 1/2 tsp. salt 1/2 c. chopped nuts 1 tsp. vanilla Combine chips, condensed milk and butter in a saucepan. Stir over low heat until melted. Stir in nuts, salt and vanilla. Spread over oatmeal mixture. Drop 2nd half of oatmeal mixture in globs over chocolate mixture (chocolate will show through when baked). Bake 350 degrees for 25 to 30 minutes until brown. Cool and cut in bars. Serve at room temperature or heat and serve with ice cream or whipped cream. |
