BANANA FRITTERS 
1 c. flour
1/2 tsp. salt
1 egg, well beaten
1 or 2 ripe bananas
1 tsp. baking powder
1/2-3/4 c. milk
1 tbsp. rum (opt.)
Sugar

Sift flour, baking powder and salt. Add milk and egg; beat well. Skin and scrape the bananas, cut in half lengthwise, then across, making 4 pieces. Drop into batter and lift out with fork (do not pierce). Fry in hot deep fat and drain well. When nicely browned, sprinkle liberally with sugar.
