MOCK HOLLANDAISE SAUCE 
2 tbsp. flour
Few grains cayenne
1/4 tsp. salt
2 egg yolks
3 tbsp. butter
3/4 c. water
1/4 c. lemon juice

Mix dry ingredients, add water slowly. Stir in egg yolks; add lemon juice slowly. Cook over boiling water until mixture thickens.
