MOCK HOLLANDAISE SAUCE | |
Juice of one lemon 1/4 c. hot water 1 chicken bouillon cube 2 tbsp. flour Salt and pepper to taste 1/4 tsp. dry mustard 1/2 c. water Dissolve bouillon cube into 1/4 cup hot water. Stir dry ingredients into the liquid until it turns to a paste. Stir in 1/2 cup water as mixture cooks and thickens. Add lemon juice as it thickens, stirring constantly. Makes 1 cup. Calories: 1/4 cup = 22 calories. Fat controlled diet: 1/4 cup = negligible fat. Diabetic and calorie controlled diet: 1/4 cup = free choice. Sodium controlled diet: prepared as directed using low sodium bouillon cube and omitting salt, 1/4 cup = negligible sodium. |
