STUFFED ZUCCHINI 
2 lg. zucchini
1 lb. ground pork sausage
1 onion, finely chopped
1 sm. green pepper, chopped
1 sm. red pepper, chopped
1/4 c. fresh mushrooms, chopped
1/4 c. grated Parmesan cheese
2 1/2 c. tomato sauce
1 c. Italian flavor croutons

Step 1: Cut zucchini in half lengthwise and cool in the microwave for 1 to 2 minutes.

Step 2: Scoop out the center pulp of zucchini and set aside shells.

Step 3: Brown sausage with onions, peppers and zucchini pulp and drain.

Step 4: Add 1/3 of tomato sauce and grated cheese, mushrooms and croutons, stir.

Step 5: Place zucchini shells in a shallow pan and fill zucchini shells with mixture, spoon remaining tomato sauce over the top of the shells.

Step 6: Cover with aluminum foil and bake for 25 minutes at 350 degrees.

Step 7: Remove the foil, sprinkle with grated cheese and broil 2 to 3 minutes until brown.

Since microwave ovens vary in power, you may need to adjust your cooking time.
