SOUR MILK HOT CAKES 
2 eggs, well beaten
2 c. buttermilk
1 tsp. baking soda
2 c. sifted flour
2 tsp. baking powder
1 tsp. salt
2 tsp. sugar
4 tbsp. shortening, melted (cooking oil)

Beat eggs well. Beat in buttermilk and soda. Add sifted dry ingredients and shortening. Pour by spoonfuls onto hot griddle. Turn when cakes are puffed and full of bubbles.

Yield: 20 4 inch hot cakes.
