GRITS & SAUSAGE 
1 lb. reg. Jimmy Dean sausage
1 c. QUICK grits
1 sm. onion
3 cans chopped green chilies
2 dashes Tabasco
2 eggs
2 c. grated mild cheddar cheese
Paprika on top

Cook sausage. Cook grits with 4 cups water. Saute onion after it is finely chopped. Mix the remaining ingredients. Bake 1 hour at 325 degrees in a greased Pyrex dish. Freezes well!
