HAM AND SCALLOPED POTATOES 
2 oz. diced lean ham
1 med. potato, peeled and sliced
2 tbsp. onion, chopped
2 tsp. parsley
1/4 c. condensed cream of celery soup
1/4 c. milk
Salt and pepper to taste

Combine ham, potato, onion and parsley in baking dish coated with vegetable cooking spray. Blend soup and milk; pour over potato mixture; cover. Bake at 350 degrees for 1 hour or until potatoes are tender. Add salt and pepper.

Microwave: Cook on high 10 minutes or until potatoes are tender. (Yield: 1 serving) Exchange 2 high fat meat, 1 1/2 bread, 1/2 milk. Calories: 365.

Since microwave ovens vary in power, you may need to adjust your cooking time.
