TOFU CREAM PIE 
3/4 c. graham cracker crumbs
2 tbsp. melted butter
2 tbsp. milk
4 eggs
1 lb. tofu, drained
3 tbsp. lemon juice
2 tsp. grated lemon peel
1 tsp. vanilla
1/4 c. honey

Mix crumbs, butter and milk. Press into 9 inch pan. In blender, combine eggs, tofu, lemon juice and blend. Stir in lemon peel, vanilla and honey. Blend for few seconds. Pour into pie shell and bake in preheated oven at 350 degrees for 30 to 40 minutes until set. Cool and chill 3 hours, serve with fresh fruit topping.
