GREEK STYLE CHICKEN 
2 sm. chicken, cut in half
1/2 c. wheat germ
2 tbsp. olive oil
1 c. sliced zucchini
1/3 c. chopped green pepper
1/2 med. onion, sliced and separated into rings
2 cloves minced garlic
1/8 tsp. salt
Dash of pepper
2 tbsp. water
4 tsp. lime or lemon juice
2 med. tomatoes, cut into wedges
3 c. cooked couscous
1/2 c. crumbled feta cheese

Coat chicken halves with wheat germ. (Shake in a bag.) Place on a baking pan and bake at 350 degrees until tender, about 30-45 minutes. In large skillet heat oil and garlic. Over medium heat cook zucchini, green pepper, onion, salt, and pepper in hot oil for 3 minutes. Add water; cook 1 minute more. Remove from heat and stir in lime or lemon juice and tomato wedges.

To serve, divide couscous among 4 dinner plates. Place vegetable mixture atop couscous and chicken half on top of vegetables. Sprinkle the feta cheese over chicken.
