SUNDAY NIGHT SUPPER 
1 1/2 lbs. sausage, cut in 1/4 patties
1/2 c. onions, chopped
1/2 c. green pepper, chopped
3 tomatoes, chopped
1 (6 oz.) can tomato paste
1/2 tsp. salt
1/8 tsp. pepper
1/2 tsp. basil
1/2 tsp. oregano
1/2 c. grated Parmesan cheese
1 (12 oz.) pkg. corn muffin mix
1 c. Cheddar cheese, grated

Lightly brown sausage patties in skillet; drain off fat, all but 2 tablespoons of drippings from skillet. Add onion and green pepper; cook until tender, not brown. Add next 6 ingredients; simmer 5 minutes. Mix Parmesan cheese and corn muffin mix. Prepare muffin mix according to package. Spread in greased shallow 2-quart baking dish. Arrange half of sausage patties on corn muffin mixture, cover with tomato mixture and arrange the remaining patties on top. Bake 20 minutes in a preheated 400 degree oven. Sprinkle with cheese and bake 10 minutes longer. Serves 6.
