RED BEANS AND RICE (Honduras) | |
2 c. red beans Salt pork 1 bay leaf 1/2 tsp. salt 1/4 tsp. red pepper 1 c. raw rice 1 med. onion, chopped 1/2 c. sliced green pepper 1 tbsp. oil Cover beans with water, add salt pork, bay leaf, salt and pepper. Cook for 2 1/2 hours until beans are soft. Cook rice. Saute onions and green pepper in oil. Discard bay leaf from bean mixture. Mix together with rice and the sauteed onion and pepper. Cook for 5 minutes. Serve with cheese and corn tortillas. |
