RED BEANS AND RICE (Honduras) 
2 c. red beans
Salt pork
1 bay leaf
1/2 tsp. salt
1/4 tsp. red pepper
1 c. raw rice
1 med. onion, chopped
1/2 c. sliced green pepper
1 tbsp. oil

Cover beans with water, add salt pork, bay leaf, salt and pepper. Cook for 2 1/2 hours until beans are soft. Cook rice. Saute onions and green pepper in oil. Discard bay leaf from bean mixture. Mix together with rice and the sauteed onion and pepper. Cook for 5 minutes. Serve with cheese and corn tortillas.

Where are you finding salt pork in Honduras??? I have been here for 15 years and have never seen it!!! Lovely recipe but not really accurate. Sometimes you can find American bacon in the stores in the big cities, tho, and that will work.
