EGGPLANT WITH SAUSAGE 
2 sm. eggplants
1 1/2 lbs. sausage
1 jar (3 oz.) prepared tomato sauce
1 Mozzarella ball sliced
1/2 c. Parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic powder
1 c. flour
1/2 c. oil
2 eggs

Cut peeled eggplant into 1/2 inch slices. Dip in egg then flour (add salt, pepper, and garlic powder to flour). Drizzle. Use 9 x 14 baking dish, brush bottom pan with oil. Remove sausage from casing, mash in bowl with fork. Place eggplant in pan drizzle oil on top of eggplants; bake for 15 minutes turn over when browned and bake 10 minutes. Build layers in baking dish of eggplant, tomato sauce, sausage, Mozzarella and sprinkle each layer with Parmesan cheese. Repeat until full. Bake another 30 to 45 minutes.
