BARLEY CASSEROLE 
1/2 c. onion
1/2 to 3/4 c. barley, not instant
4 tbsp. butter
1 (4 oz.) can mushrooms, liquid also
1 can chicken broth

Saute onions and barley in butter until brown. Add mushrooms and liquid and chicken broth. Bake at 350 degrees for 1 hour 15 minutes, covered. Add almonds on top and bake 15 minutes longer.
