QUICHE MUFFINS 
1 (16 oz.) carton cottage cheese
3 egg whites
5 eggs
1/4 c. buttermilk
1/4 c. flour
1 tsp. baking powder
1/4 tsp. salt
2 c. (8 oz.) sharp grated Cheddar cheese
2 green onions, chopped
10 slices bacon, cooked and crumbled

Put cottage cheese in food processor; blend until sooth. Put into bowl. Mix egg whites in food processor until foamy. Add next 5 ingredients and process until smooth. Add egg mixture to cottage cheese mixture. Stir in grated cheese, onions and bacon. fill greased large muffin tins 2/3 full and bake 12 minutes - 15 minutes or light brown. Bake at 400 degrees. Makes 10 muffins.
