OLD FASHION CARROT CAKE 
CAKE:

2 c. sugar
1 1/2 c. Wesson oil
4 eggs
2 tsp. cinnamon
3 c. shredded carrots
1/2 c. pecans
2 c. sifted flour
2 tsp. baking soda
1 tsp. salt

FROSTING:

1/2 stick butter
8 oz. cream cheese
1 box confectioners' sugar
2 tsp. vanilla
1/2 c. chopped nuts

CAKE: Mix sugar, oil and eggs, then mix all other ingredients together. Bake in 3 layers at 300 degrees for 45 minutes.

FROSTING: Cream together butter and cream cheese. Add remaining ingredients. Frost completely cooled cake.
