PEACH COBBLER | |
1 1/2 lbs. (3 c.) fresh peaches, peeled & sliced or 2 (16 oz.) cans sliced peaches in light syrup, drained 3/4 c. sugar 1/4 tsp. ground mace 1 c. flour 1 tsp. baking powder 3/4 c. milk 2 lg. eggs, slightly beaten 6 tbsp. butter Heat oven to 375 degrees in medium bowl. Toss peach slices, 1/4 cup sugar and mace to mix, set aside. In second bowl combine flour, remaining cup, 1/2 cup sugar and baking powder; stir in milk and eggs until just blended. Place butter in 9 inch square baking pan. Set pan in oven until butter is melted and hot. Remove pan from oven, immediately pour batter over butter. Spoon peach mixture evenly over batter. Bake at 40 to 45 minutes until puffed and brown. Serve warm. Can be topped with ice cream or whipped cream. |
