FRENCH CHOCOLATE MERINGUES | |
1 c. (6 oz.) semi sweet chocolate morsels 3 egg whites (room temperature) 1/2 tsp. vanilla 1 c. sugar 1 c. finely crushed saltines Preheat oven to 350 degrees. melt chocolate chips in top of double boiler over hot water. Not boiling. Remove from water, let cool 5 minutes. Combine egg whites and vanilla, beat until stiff but not dry. Add sugar gradually, beat until very stiff. Fold in crackers and melted chocolate. Drop by teaspoon on greased cookie sheet. Bake in 350 degree oven for about 10 minutes. Remove from cookie sheet, cool on rack. |
