RHUBARB CREAM DELIGHT 
1 c. flour
3 1/2 tbsp. powdered sugar
1 stick butter
3 c. cut up rhubarb
1/2 c. sugar
1 tbsp. flour
12 oz. cream cheese
1/2 c. sugar
2 eggs
8 oz. sour cream
2 tbsp. sugar
1 tsp. vanilla
Whipped cream and strawberries (optional)

For pastry mix flour, powdered sugar and butter. Pat into a 9-inch pie plate or square pan.

For first layer, combine rhubarb, 1/2 cup sugar and flour; mix and pour into pastry shell. Bake at 425 degrees for 15 minutes.

Prepare second layer by beating cream cheese and 1/2 cup sugar until fluffy. Beat in eggs, one at a time, then pour over hot rhubarb. Bake at 350 degrees for 30 minutes.

Combine sour cream, sugar and vanilla. Spread over baked rhubarb dessert and continue baking for a couple minutes until set. Garnish with strawberries and whipped cream, if desired.
