RHUBARB CREAM CHEESE DELIGHT 
CRUST:

1 c. all-purpose flour
1/4 c. sugar
1/2 c. (1 stick) butter

Mix flour and sugar. Blend in softened butter. Pat in 9-inch pie pan; set aside.

RHUBARB LAYER:

3 c. rhubarb, cut in sm. pieces
1/2 c. sugar
1 tbsp. all-purpose flour

Mix well. Pour into crust and bake at 375°F for 15 minutes.

CREAM LAYER:

1 1/2 (12 oz.) pkgs. softened cream cheese
1/2 c. sugar
2 eggs

Mix well and pour over rhubarb. Bake at 350°F for 25 minutes.

SOUR CREAM TOPPING:

1 c. dairy sour cream
2 tbsp. sugar
1 tsp. vanilla

Mix together and spread on top.
