DR. BYRD FRUITCAKE 
3 c. flour
1 tsp. cinnamon
1 tsp. baking soda
2 c. sugar
1 tsp. salt
1 1/2 c. cooking oil
1 (8 oz.) can crushed pineapple, not drained
1 1/2 tsp. vanilla
3 eggs
1 c. pecans, broken up
2 c. bananas (the riper the better), diced

Sift dry ingredients together - add oil, pineapple, eggs and vanilla. Fold in bananas and nuts.

DO NOT USE MIXER.

Bake 1 hour 10 minutes in bundt pan (sprayed with Pam or well greased with oil) at 350 degrees. Start checking for doneness after 1 hour - cake is not good if overcooked.
