DR. COOKIE'S
PEANUT-BUTTER-OATMEAL COOKIES
 
3/4 c. corn-oil butter, room temp.
1 1/2 c. brown sugar, packed
2 eggs
1 c. chunky peanut butter
1 tsp. vanilla
2 c. unbleached all-purpose flour
1 tsp. baking soda
1/2 tsp. salt (optional)
1 c. rolled oats

In medium mixing bowl using hand-held mixer, cream butter with brown sugar. Mix in eggs, peanut butter and vanilla.

In small bowl, combine flour, baking soda and salt, if using. Mix into butter and sugar mixture. By hand, stir in rolled oats. Drop by level tablespoonful onto ungreased non-stick baking sheet. Bake at 350 degrees about 8 minutes or until cookies just begin to turn gold. Makes about 3 dozen cookies.
