PEANUT BUTTER OATMEAL COOKIES | |
1 c. packed brown sugar 3/4 c. sugar 1 c. butter, softened 1 c. peanut butter 2 eggs 2 c. all purpose flour 1 c. rolled oats 2 tsp. baking soda Heat oven to 350 degrees. In large bowl, combine first 5 ingredients; blend well. Stir in remaining ingredients. Drop by teaspoonfuls, onto ungreased cookie sheet. Press each with a fork. Bake at 350 degrees for 8 to 12 minutes or until golden brown. Immediately remove from cookie sheet. Note: These are such a favorite I always double the recipe. Chocolate chips are sometime added for a change. I use a small ice cream scoop to portion out the dough rather than teaspoon. This ensures large uniform cookies every time. Yield: 60 to 72 small cookies. |
