VEGETABLE CASSEROLE 
1 (10 oz.) pkg. chopped broccoli
1 (10 oz.) pkg. cauliflower
1 (10 oz.) pkg. cut carrots
8 oz. Velveeta cheese
1 stick butter
1 c. Ritz crackers, crushed

Thaw frozen vegetables. Melt 1/2 of butter and all of the cheese. Mix with vegetables. Place in casserole dish. Melt other 1/2 of butter and mix with Ritz crackers; spread across top of vegetables. Bake at 350 degrees for 1 hour.
