CRANBERRY DELIGHT 
2 lbs. whole cranberries
2 c. sugar
3 c. water
1 c. orange juice
2 pts. heavy cream
2 tsp. vanilla
Confectioners' sugar
1 lg. box graham crackers
1 c. shelled walnuts

Clean cranberries. Mix the sugar and water and let sit for 2 hours. Bring sugar and water to boil over low heat. Boil 5 minutes. Then add cranberries. Cook until you get a solid cranberry sauce (20 minutes). Stir in orange juice and refrigerate overnight.

Next day, beat cream and confectioners' sugar and vanilla to taste. Crush graham crackers and walnuts using a rolling pin. Use large glass bowl. Place layer of cranberry sauce, layer of cracker mixture then layer of whipped cream.

Continue layering until all ingredients are used. End with whipped cream on top. Chill until ready to serve. Serves 10 plus.
