CREAMY BURRITOS 
1 lg. onion, sliced lengthwise
2 cloves garlic, minced
1 tsp. vegetable oil
2 c. sm. broccoli florets
2 c. sliced mushrooms
1 lg. red bell pepper, sliced into thin strips
1/2 c. salsa
1 tsp. ground cumin
4 oz. light cream cheese
8 tortillas
Shredded Cheddar cheese (optional)

Saute vegetables in oil until onion is translucent. Stir in salsa and cumin. Simmer 5 minutes. Add cream cheese to melt, stirring to mix. Fill tortillas, topping with Cheddar cheese if desired.
